Quiet Ember Hojicha is our working Chado name for Sugimoto's Hojicha from Shizuoka. What makes it compelling is not only the roast, but the base tea itself: earlier-harvest kukicha and sencha, chosen for a softer, sweeter cup than a flatter late-season roast. It gives the shortlist an evening tea and a first-time-drinker tea without slipping into commodity language or commodity flavor. We see it as a calm, useful anchor for the collection.

Sugimoto has noted strong demand for hojicha in the United States, and that lines up with what we want from the first collection: one tea that feels immediately welcoming without losing craft detail. We are keeping it sold out until we can confirm the final pack format and supply, but it remains one of the clearest fits on the shortlist.
